My experience is limited to Ljubljana. I did ride my bicycle from Venice, Italy, to Ljubljana in 1996, but I don't remember much. One thing that I saw on that trip, that I would definitely like to check out is the "Extreme Bar". A little wooden shack near the landing area for paragliders/parapente coming off a massive cliff in the Slovene Alps near the Italian border. I hope it's still there, but I've only seen it in 1996. That part of Slovenia felt a lot like Austria, were it Slavic.
Here are some great Slovene resources to check out:
carniola.org a blog on Slovenia (and kindly links to me)
www.burger.si incredible panoramas of Slovenia, including cities and maps.
geocities.com/brigita_dolenc is an excellent site on trails and climbs in the alps of Slovenia
Here is an interactive map of Slovenia that links to pictures. It only has content for a handful of cities and appears to no longer be updated.
Someone recommended the "Balkan ekspress" restaurant in Maribor for good baklava.
The site Toti Maribor has some nice images of Slovenia's second-city, Maribor. In particular, it lets you see how the city has changed (or hasn't changed) over the decades. Here's a timeline:
Maribor Today ---> Maribor Back-Then ---> Maribor Way-Back-When
